Participant of the peasant charter, the Sassay goat farm with which we have been working since the beginning is a small family farm. We know their methods of working and the products very well. Even the goats have no secrets for us! We call them by their first names! Hervé Barbeillon rears his 110 goats and produces his own cheese under the appellation AOP Selles-sur-Cher. His farm is a family story that began three generations ago. For three years he has been preparing his succession smoothly and has linked up with Bérangère Lavalette to ensure the succession with competence.
